Seems to be "lasche in carpione" but I don't know what lasche are either. Wikipedia uses the Italian "lasca" in its list of regional fish dishes but when you click on it you go to a page about chess moves so it's clearly not correct :(

Carpione: Il carpione è una preparazione utilizzata per la marinatura di carne, pesce e verdure. Viene svolta generalmente con una base di soffritto Mirepoix (sedano, carote e cipolle), a metà cottura viene aggiunto l'aceto e fatto evaporare, nel mentre, friggere il pesce o carne (infarinata) tagliato a tronconi, servire freddo. È un piatto molto antico, può essere classificato sia come un antipasto che un secondo.
I'd say to leave it as it is, because it's in dialect, and to add a small explanation in brackets, not too accurate, just to give an idea.

It appears so - but do add something about the vinegar, too, because just "small fried fish" could easily be just "fritto misto" or "frittura di pesce", where you would have anchovies, prawns, squid/calamari... all just rolled in flour and deep-fried.

Oh right, I was not sure whether "pickled" included being actually cooked in vinegar (which seems the method for this recipe), or just meant being stored covered in vinegar... so I just skipped it ;) Thank you!
