The wiring harness would refer more to the entire bunch of cables together, with the extra context, I still think that braided cable fits better.

The thing is - this term also applies to unshielded wiring (such as the wires connecting the different components in a PC), where there is nothing that is "braided" actually |

Right, and that was the word in the phrase field, a number of insulated wires surrounded by a grounding braid is called a braided cable.
