for middle-class buyers, budget shopping

эконом класс - I supose it's taken from travel classes terminology - business, economy (lower prices)

Эконом - short of "экономический"

...экономического класса...

The store(shop) corresponds to size of economic class (i.e. middle size) supermarket

The store fits with the format of economy class hypermarket

Here эконом is shortened экономического

This shop may be considered a hypermarket of economic class

This is how I wоuld convey the meaning.

NOTES:

1)"эконом" is not a nominative but a short form for "экономный"

2)the russian marketing people very seldom know what they are speaking about and even more seldom other russian people may understand them - so do not take all this stuff too serious :)))
