French term
ADT

Food & Drink
This acronym occurs several times in an audit report for a cheese-making plant. It is used when referring to the product types produced by the plant (which are types of Emmental).
Not much context, I'm afraid:
- nombre de familles de produits et de références produits par familles :
4 familles : emmental ADT (12 produits) ; emmental ASF (75 produits), fondu (22 produits), Emmental allégé (4 produits)
This is typical. Thanks in advance for any insights!
This term is obviously linked to my other question, about ASF and I originally put them both in the same question - this was removed because I asked about two terms - even though they're obviously connected.

traditionally crafted
traditionally crafted Emmental - produced according to a quality label ”Affinage de Tradition” (which guarantees traditional maturation in cellars for a minimum of 7 weeks where the hard crust develops as well as the famous holes)
Traditionally crafted emmental
This Emmental is **produced according to a quality label ”Affinage de Tradition” which guarantees traditional maturation in cellars for a minimum of 7 weeks where the hard crust develops as well as the famous holes**! Entremont Emmental is golden coloured and has a gently biting, fruity taste. They are many ways to enjoy this cheese: on the cheese board of course, but also sliced in a sandwich or served grated over your favourite pasta or soup dishes.

Traditionally ripened
The 'Affinage de Tradition' ADT method involves maturing the cheese in a traditional wheel with a hard rind. ASF 'Affinage sous film' is done in rectangular blocks where the film covering prevents the formation of the hard dry rind.
