either of these terms could be used, but it probably depends on the length of time exposed to heat. "Sautéed" food generally take less than a minute, "pan fried" might be more appropriate for octopus and king prawn.

octopus and prawn skillet
It's funny, Google's translation tool gives the definition for sartenada as "Sizzlin 'Skillet," in capital letters. That seems a bit much. Sometimes meals pan-fried and served in the pan are referred to as "skillets."
