Chemical hazards can be classified into the following two categories:
•Natural poisonous chemicals derived from natural food ingredients and not from environmental, agricultural, industrial, or other contamination. For example, aflatoxins and mycotoxins.
•Poisonous chemicals that are added to food (intentionally or not) at some stage of the production process (cultivation, harvesting, storage, processing, packaging, distribution).
This category includes microbicides, fungicides, insecticides, fertilizers, residues of drugs and antibiotics, and food preservatives. Also: lubricants, cleaners, and dyes.
To determine each chemical hazard, the detection of any chemical residues (present in animal tissues). Should be preceded by asking the following questions:
•Type of medicinal products and microbicides used in the production of animals.
•Food and additives are provided to animals.
•Contaminants may enter the animals from the surrounding area.
•Residues of fungicides that can end up in animals from plants.
The quality of the water used for watering animals
To ensure healthy animals should be required that:
1. suppliers comply with specifications
2. the provision of certificates by suppliers for the absence of illegal substances
3. the development of specific specifications on the part of the company regarding residual limits of pharmaceutical substances in the urine or tissues of animals
4. confirmation that lorries used for the transport of animals do not contain chemicals that may pose a danger to the animals
Many meat processing enterprises use various chemicals when processing meat and preparing products. In addition, the possibility of developing chemical hazards in different other places should be highlighted, such as:
•Before receiving chemicals in the enterprise.
•When receiving chemicals at the enterprise.
•At every point in the treatment where chemicals are used.
•During the storage of chemicals.
•When storing detergents, disinfectants, or other chemicals.
